After a long period of home-cooking, who else is running out of meal ideas? I face the same problem. I’ve cooked so many Thai dishes over the months that I’ve run out of ideas. That’s why I’m looking elsewhere for new inspiration. Let’s try this spicy curry dish from India served with Thai-style acar.

Ingredients

  1. Chicken
  2. potato
  3. Curry paste
  4. Spice powder
  5. garlic
  6. Coriander root
  7. Red onion
  8. Dried chili
  9. Shrimp paste
  10. Cumin powder
  11. cucumber
  12. vinegar
  13. Sugar
  14. Thai chili
  15. Salt
  16. Lime juice

Method

  1. With a mortar and pestle, pound together the curry paste, shrimp paste, red onion, coriander root, and garlic until well combined.
  2. Add the spice and cumin powders to the combined curry past, and leave to marinade for one hour.
  3. In a pan, stir fry the chicken in vegetable oil until cooked. Add just enough water to cover the chicken.
  4. Add potato. Let the curry simmer until the chicken is tender. Season to taste with sugar, fish sauce, and other preferred condiments.
  5. For the acar, mix together vinegar, lime juice, sugar, and salt. Add cucumber, Thai chili, and red onion. Serve with the curry.
