Happy New Year 2021 to all! Another year has passed. Some of you might feel strange about the past year since it was like no other because of the pandemic. You probably stayed home a lot and didn’t travel as much as you would have liked. And somehow, the beginning of this new year is not so different. But since we’re going to be home all day, let’s try this easy dessert recipe at home.

Ingredients

  1. 200 g coconut meat
  2. 2 cups coconut water
  3. 3 tablespoons sugar
  4. 1/8 teaspoon salt
  5. 1 tablespoon corn starch
Coconut dessert with yogurt and ice cream

Method

Set aside some of the coconut meat and two tablespoons of coconut water. Blend the rest together until smooth.

Mix the corn starch in the coconut water. Set aside.

Mix the sugar and salt in the coconut water blend, heat on top of the stove until the sugar dissolves.

Then add the corn starch mixture and stir until thickened. Turn off the heat and let cool.

Pour the ice cream base in the ice cream maker and let it whip for 35-40 minutes (Set the temperature of the ice cream maker to -25 C). Once the ice cream is thick, add the fresh coconut meat that was set aside. Fold it in with a spatula. Transfer the ice cream to an airtight container and let it sit in the freezer overnight before serving.
