Sweet Girl: Macarons for Children’s Day

Children wait all year round for this one special day: Children’s Day. It is the day that we adults tend to spoil our children a little more than usual, don’t you think? Whether hanging out with them or buying them toys and sweets, it’s the one day we let them have it their way. So why not make some delicious macarons for your children? Let’s begin.

Ingredients

  1. 300 g almond meal
  2. 300 g icing sugar
  3. 110 g egg whites
  4. 10 g Green Tea Powder
  5. 75 g water
  6. 255 g granulated sugar
  7. 110 g egg whites

Method

Bake the almond meal in the oven at 150C for five minutes to dehydrate. Set aside to cool.

Beat the egg whites with a whisk until foamy. Add cream of tartar and keep whisking until combined.

Continue beating the eggs with an electric mixer. Separate the granulated sugar into three parts.

Gradually add granulated sugar while the mixer is on until the ingredients are incorporated and the meringue forms soft peaks.

Add food colouring. Whisk again until the colour is well blended into the mixture.

Sift together almond meal and icing sugar.

With a spatula, slowly fold the almond mixture in to the meringue.

Transfer the batter into a piping bag and pipe the macarons into small circles on parchment paper.

Let the macarons sit for an hour until dry to the touch.

Bake at 150C for five minutes. Open the oven door to let out the moisture. Continue baking for eight more minutes.

Let cool and remove from the baking sheet. The macarons are now ready to fill.
