Sweet Girl: S&P Butter Cake Copycat Recipe

I’m that girl who loves S&P’s butter cake so much she can eat the whole cake by herself. It’s just so soft and buttery. I remember buying it when I was younger, and one slice would cost only Bt10 then. It’s Bt23 now. Way to make me feel old, huh? But since buying one slice isn’t going to satisfy anyone’s sweet tooth, let’s try and make a whole cake by ourselves.

Ingredients

  1. 150 g. butter
  2. 1/2 teaspoon salt
  3. 170 g. granulated sugar
  4. 3 medium-sized eggs
  5. 170 g. cake flour
  6. 2 teaspoons baking powder
  7. 2 teaspoons vanilla extract
  8. 100 g. milk

Method

  1. In a stand mixer, beat butter, sugar, and salt together until the mixture is light.
  2. In a separate bowl, sift flour and baking powder together.
  3. Add one egg at a time into the wet ingredients and continue beating until smooth. Add vanilla extract for fragrance, then gradually add the sifted dry ingredients into the mixture. Add milk. Continue mixing until everything is well incorporated.
  4. Add food coloring if you prefer.
  5. Carefully pour the cake batter into a prepared baking pan.
  6. Bake the cake at 180C for 40-50 minutes.
  7. And voila! That’s my copycat recipe for S&P’s delicious butter cake. The first few tries may not turn out okay, but with enough practice, I’m sure your cake will come out perfect.
